    Low Carb Pavlova

    This recipe is AMAZING!!! PLUS it’s packed with protein, gluten free, sugar free, crunchy on the outside and light as a cloud in the centre.  Load with cream, pomegranate seeds and chopped nuts, or top with berries and enjoy.
    • 4 Egg whites
    • 1/4 Tsp Cream of tartar
    • 1/3 Cup Erythritol, Stevia or your preferred spoon for spoon sweetener
    • 1/2 Tsp Vanilla extract

    Preheat oven to 350°

    Beat egg whites until foamy, then add the cream of tarter. 
    Beat until stiff peaks form
    As that happens, slowly add sweetener and vanilla extract and mix well
    Cover a baking tray with baking paper
    Spread mixture into a wreath shape on top of the baking paper
    Bake at 350° for 25-30 minutes and then lower temp to 210° and bake for an additional 30 minutes. If crust is still not hard turn oven off and let sit until completely hard.

    For serving:

    • Berries or pomegranate seeds and roughly chopped walnuts
    • Whipped cream, sweetened with a tbsp of your preferred sweetener and vanilla essence
