Low Carb / Keto French Toast Using 90 Second Coconut Flour Bread
LOVE THIS! I’m used to making the normal 90 second bread with Almond meal. This makes a nice alternative to the standard 90 second bread and I know many people struggle to find uses for coconut flour, so here you go!!
- 1 ¼ tablespoon butter melted
- 1 teaspoon cream cheese
- 1 egg
- 1 tablespoon coconut flour
- ¼ teaspoon baking powder
- 1/4 tsp mixed spice
For the coating:
- 1 egg
- 1/4 cup heavy whipping cream
- 1/4 tsp Stevia
- Sugar-Free Maple Syrup if you can find it, or a little whipped cream and berries. It’s also lovely with bacon!
Melt butter in a ceramic or glass bowl and soften cream cheese. It may appear really lumpy but it will all turn out ok. Just breathe.
Add the rest of the ingredients and whisk together until combined.
Using your preferred cooking vessel, cook in the microwave for 90 seconds. I use 2 pieces of the Create-A-Cake’ cake moulds, clipped together and sitting on top of baking paper as this creates the perfect size for a piece of toast.
Remove from the microwave and allow to cool.
Cut bread in half.
In a bowl of flat dish, add 1 egg and 1/4 cup heavy whipping cream and combine with a whisk.
Soak bread on both sides in egg and heavy whipping cream mixture until well absorbed.
Heat 1 tablespoon of butter in a skillet and fry each side until crisp.
Sprinkle 1/4 teaspoon sweetener on top and serve with sugar-free syrup, or berries and cream.
