    Low Carb Tortilla Chips

    SO EASY. AMAZING. Enough said.

    • 1 tbsp chia seeds
    • 1/4 cup hot water
    • 1 cup almond meal
    • 1 tbsp olive oil
    • 1/4 tsp paprika
    • 1/4 tsp dried cumin
    • Salt and pepper

    Preheat oven to 200 degrees celsius

    Soak chia seeds in water for 10 mins, stirring occasionally, till gluggy

    Add paprika, cumin, salt, pepper, almond meal and olive oil and mix till mixture forms a ball

    Cover a baking tray with grease proof paper and place mixture on top

    Cover with another piece of baking paper and roll out till thin

    Remove top layer of baking paper and bake in the over for about 6 minutes or till golden

    Remove from oven and cut through while hot, but leave till cool

    Enjoy with your favourite dip, guacamole or a healthy salsa!

    Guacamole

    • 1/4 cup finely minced onion
    • 3 avocados
    • 1 1/2 tablespoons fresh lime juice or lemon juice
    • 1 large tomato, chopped into small pieces
    • 1/4 cup coriander
    • 1/2 teaspoon ground cumin
    • 1/2 teaspoon salt, or more to taste
    • Optional: 1 to 2 teaspoons minced jalapeño or chilli pepper

    Add diced onion to a small bowl

    Cut avocados in half, lengthwise and remove the seed. I use a big knife and chop into the seed once, then twist the seed out. Super easy. Scoop out the flesh and add to the bowl of onions

    Add a squeeze of lime juice then use a fork to mash until creamy, but still chunky. Stir in the tomato, coriander, cumin, salt and diced peppers (if using). Taste the guacamole and adjust with additional salt, peppers, or lime juice

    Serve immediately with corn chips or cover with plastic wrap by pushing the plastic wrap down onto the guacamole and refrigerate up to one day
